Soak a handful of peach gum in cold water for 10-24 hours (depending on the size) until there is no hard core. Add water and simmer for 20-30 minutes. A small amount of rock sugar can be added after turning off the heat.

Soak bird’s nest in cold water (purified or mineral) for 4 hours and then pull apart. You can rub it gently. The looser the strips are, the easier to rinse out the impurities under running water. After cleaning, add water to cover the bird's nest and steam for 20-25 minutes or in a stew pot for 30 minutes.
